Baking soda is the sodium salt of bicarbonate acid. Finely ground white powder contains no proteins, carbohydrates or fats.
Of the mineral substances in soda, selenium and sodium are contained. In cooking, baking soda is used as a leavening agent in baked goods and also neutralizes the acidity of other foods. Combining with lactic acid (yeast, vinegar), soda releases carbon dioxide, bubbles make the dough more fluffy and soft.
